Chocolate Chip Cookies

A few days ago we got a new stove (or rather our landlady did) because our old one was, well, old! So, to inaugurate the new stove/oven, I decided making some chocolate chip cookies would be a good idea. Don't you? This is just the regular Nestle recipe that you can find on the back of a package of chocolate chips, but I used spelt flour instead of wheat (our "gluten-free" ladies have found that it might actually be the wheat that they can't tolerate - not the gluten). So it's not anything special, but then I have it on the blog. Plus I took pictures! And Nestle doesn't include pictures in their recipe!

So anyway...

Chocolate Chip Cookies
  • 2 1/4 cups all-purpose flour (Here's where I used spelt, or if you like, you can call it "Dinkel" which is it's German name. Lots more fun to say, don't you think?) to make gluten free we use rice flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cup (2 sticks or 18oz) butter, softened
  • 3/4 cups granulated sugar
  • 3/4 cup packed brown sugar (We can't find American brown sugar over here, we have another type of "brown sugar" but less granulated. So I add a spoon full of molasses when I put the sugar in.)
  • 1 tsp vanilla extract
  • 2 large eggs
  • 2 cups (12-oz. pkg.) semi-sweet chocolate chips (Of course in the original recipe they have the brand name and all, but actually, I think that Trader Joe's chocolate chips are better. Shhh....)
  • 1 cup chopped nuts (I never put nuts in.)


Preheat the oven to 375F (or 190C).

Combine flour, baking soda, and salt in a small bowl.


Beat butter, granulated sugar, brown sugar, and vanilla extract in a large bowl until creamy.


Add eggs, one at a time, beating well after each addition (another thing I never do-the one at a time part).

 
Gradually beat in flour mixture.


Stir in morsels (and nuts).



(You can't buy "chocolate chips" here so I just chop up a bar of chocolate [Cailler dark chocolate for those of you who might want to know] )

Drop by rounded teaspoon onto ungreased baking sheets (or whatever you usually do).

Bake for 9 to 11 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.

    Don't take too many cookies with you to camp!

    I would have made cookies myself last week before I went to camp, but I had plenty of my own gluten free treats.

    Oh, and are you ecstatically happy now?
